So many colours you can choose from. those are propably the most usual ones I think. If you want something other than those please say so in your post.

I would have a nice navy blue. Much darker colour than those seen in the films.

i would take a silver, and then a dark blue, kinda like Bao-durs cobal blue saber from KOTOR II if you use the USM mod.

I would take silver. It's kinda neutral colour. Red would be cool too.

Yeah I say I would use a Green Blade, Mainly due to the Consular role in KOTOR (which is the role I would take as a Jedi)
