One of the many continuity issues

Why do the Sith have gravity-well technology when the "modern" galaxy has only just discovered it?

They didn't :"only just" discover it. Many factions have had it for centuries. It was a hard thing to do, yes, but in that case the Sith got lucky.

I thought the Republic couldn't figure it out and the Chiss, who lived in the Unknown regions, had no idea it existed either. And if this was merely lost tech, why didn't people remember that it was possible? (all this is based off OF, the book)

i think it was that in old republic times they realized that you have to know where the ship is coming from and when its coming to make gravity wells effective. easier to shut stuff down at the source. maybe they just shut the project down and then it was rediscovered without that realization having being made yet

It's just Jorj  Car'das, from Corillia said that the Rep scientists thought it was impossible... but if it was used in a famous conflict, how would they NOT know it was possible? My brain hurts  :(

They didn't believe they could generate enough energy to create the mass-shadow, or something like that. But, if it was already proven to be possible, then why did the Republic scientists believe the technology to be possible to create?

Oh, I know how the empire GOT the tech. I believe it was from the captured one thanks to Thrawn. What I don't get is how the Old Republic scientists thought that such technology was impossible to create when a glaring example of the fact that it was possible was staring them in the face!

old republic had it first and the sith stole it from them then destroyed all of their ships that were capable of it.

and if I remember right the old republic had the technology to prevent hyperspace travel. they just didn't have ships with large enought powersource to do. we have to remember that old republic didn't have a army and their fleet was small also. mostly made up from those consular ships from Ep I. So they could do it. but they just didn't.

Good point, they never expected a war, which brought the need for gravity well generators, so they forgot about it. When the war came they either didn't care or still didn't remember. Palpatine probably remembered them the whole time and brought them back only once his empire was created.
