Besting a lightsaber user with your own saber is, frankly, the easiest way to do it. We're talking about ordinary human beings (or assassin droids) who many of the cockier Force-sensitives would underestimate.

Well if you're going by success rate of jedi killing...it would be in this order.
General Grievous has killed the most in personal combat having killed over 240 Jedi in his 3 year career, that is unequaled in SW.
Darth Vader who hunted down and killed over 40 Jedi remnants in addition to the ones he killed in the Jedi Temple being unknown in full number but more than a dozen can be directly attributed to him.

Then again, we're talking the KotOR era. HK might have an interesting time trying to take down a post-Endor Jedi.
