Personally I really like my Sith Sorcerer. I chose the Madness skill tree (SWTOR no longer lets you choose abilities from all 3 skill trees) because its mostly drain attacks (force drain is my favorite force attack). I like using Force Lightning too, I just wish it was blue and not purple.
I like my Sith Warrior's Force Choke attack, and I think its too bad the Warrior doesn't get any kind of lightning attack besides Smash (as far as I know so far), and that the Inquisitor doesn't get to use any kind of force choke. There are boss enemies like Hiran Bessiker and Thana Vesh that get to use attacks from both character classes.
I'm only posting this for the Sith Empire because my main (Sorcerer) is an Empire character along with my Juggernaut. I have a Scoundrel as well, but I don't know a whole lot about the Republic side.
Which character class do you like to play as the most, and why?
