Im not saying i would hide in a fighter, im just sayin its much much much easier to fight and still stay unnoticed in a fighter compared to a cruiser

depends my ship weaponary. if it's designed to fight against starfighters I ain't gonna attack an ISD. even I ain't that stupid.

but if the fighter is trying to survive by hiding it isn't part of the fight, is it? similar thing with that star destroyed hiding in bebula or something like that.

In the middle of battle there is (as you agreed) the cloaking device (used many times in canon), there is also sensor distortion (such as from nebulae), and hiding behind other objects (ships, asteroids, moons, whatever).

There are several cases of Star Destroyers lying low in canon.  Invidious and Errant Venture (well, sort of anyhow) being most prominent, not mentioning the times when certain ships dropped out of sight while on special missions (such as the Admonitor when Thrawn was in the unknown regions), and then there is the possibility for a ship to hide in deep space, or in a nebulae field, or use a cloaking device (all of which have occurred in one form or another).
