I'm just wondering, if I conquer Mandalor will I have access to their units and if so which factions can use them?

Yeah, if you get the influence level to 10 at Mandalore you can build Keldabes. Zsinj can also build Crusaders if he has a pirate base.

I know Zsinj can build Crusaders (though the 'theft' makes them somewhat undesirable). What's this 'influence' thing?
